How flavors are named
United States · 21 CFR 101.22
- All natural, all from the named food: natural X flavor (FTNF). The food may be called “X” or “natural X flavored”.
- All natural, partly from the named food: natural X flavor with other natural flavors (WONF).
- All natural, nothing from the named food: natural flavor, “X type”. Do not name X as the source.
- Any artificial flavoring: artificial, or natural and artificial, X flavor. The food is “artificially flavored”.
- Non-flavoring ingredients (solvents, carriers, emulsifiers, preservatives) are declared by name, in descending order of weight.
European Union · Regulation (EC) 1334/2008
- “Natural” only when every flavoring component is a natural flavoring substance or a flavoring preparation.
- Natural X flavouring: at least 95% of the flavoring component comes from X.
- Natural X flavouring with other natural flavourings: partly from X, and X is still recognisable.
- Natural flavouring: natural, but no reference to a source.
- Flavouring: any other case. Sales to manufacturers list flavoring categories, then each other substance, in descending order of weight (Art. 15).
Restricted substances
EU · Annex III of Regulation (EC) 1334/2008
Part A substances must not be added as such. Part B sets maximum levels in compound foods when they come from flavorings or ingredients with flavoring properties.
